Tung Ting Oolong
This oolong is a Taiwanese grown tea from the Tung Ting region. The high altitude and cloud cover from this area make the tea a particularly good selection for oolong processing. When brewed, tasters will note strong floral aromas and some mineral notes. The tea leaves a subtle woody aftertaste due to it's final firing using charcoal to halt the oxidation process.
Oolong tea is unique in it's flavors in part due to it's processing methods. While made from the same plant as green, and white teas, the leaf typically undergoes heavier withering and oxidation, either by the sun or artificial means. Following oxidation, the leaf is twisted and curled into it's final form. The beaded or curled leaves will fully unfurl in your brewing apparatus when given enough space.
Brew Temperature: 85° - 90°C (185° - 195°F)
